The first thing that I look for in a glass of Pinot Noir after color and aromatics is balance.  It’s important that the fruit has the right amount of acid, and that each characteristic balances the others.  What I love most about Pinot Noir, aside from how great they are with food is how brilliantly complex they can be.  A Viloria’s Pinot Noir blends four different clonal selections which result in a stunningly complex profile that’s absolutely delicious.
